In your situation, you can probably ignore Opportunities and Activity Sets. These would only matter if you want to track sales progress in the CRM (opportunities) and if you want tasks to automatically get assigned during the sales process (activity sets).
Instead, it sounds like you can mostly focus on the “Contact” and “Task” modules. Make sure you’re tracking all the contact data you need– you can add custom fields under the control panel if need be. Then, use Tasks to save reminders for follow-up emails after you’ve called a client.
