What happens when the customer has issues with the drop shipped product? What if the delivered product is defective, or not not according to the order?
This depends a lot on the selling platform and the vendor you drop-shipped with, as well as the nature of the issue. If it is a product with a service center local, the customer could take it to the local service center for repair or exchange. It is very common to have them send the product back for exchange, though. Some vendors want you to accept the exchange and some will allow the customer to send it back to them, and they resend a new product to the customer.
Some products carry a “repair or replace” type of warranty, where the manufacturer will repair or replace the item at their discretion. Some leave it to retailers to take care of defective products.

You must contact the seller and indicate that the product shipped is not ordered or is damaged. The seller must be responsible for the product until its final delivery from my point of view.
It really depends on the agreement you have with your supplier. The terms I set with my drop shippers includes a section on which party is responsible for customer care. Typically the supplier should replace it with sufficient evidence that it is indeed defective.
